Certified Organic Kalamata OlivesVassiliki® means Royalty. The Kalamata olive is considered the Royalty of the Greek Olives. The Kalamata Olive is hand picked because it is similar to the coffee bean - each olive ripens at a different time. This special olive is produced only in Greece. They have tried to grow them elsewhere without success. It is only produced in the South Western Region of Peloponissos and Kalamata, Greece. Our harvest of Vassiliki® certified organic Kalamata olives, is cured in the natural traditional way, using our family recipe. First the olives are soaked in water daily, for a number of days to remove the bitterness. Then they are cured in a sea salt brine celery and lemons. The olives are then put in a sea salt brine, wine vinegar and certified organic extra virgin olive oil, to sweeten the flavour of the olives without compromising the natural good flavour of the Kalamata olive. The arid certified organic Kalamata olives, from a higher elevation do not receive any irrigation. The flavour is the true kalamata olive, firm with a slight bitterness that adds to the delicate flavour. We cure these olives in the traditional way and using our certified organic extra virgin olive oil to sweeten them. Specialty Green Cracked OlivesGreen Cracked Olives cured with lemons, a fresh and delicious flavour, naturally cured in sea salt, wine vinegar, anise and our certified organic extra virgin olive oil. This specialty olive is prized for its good taste and excellent accompaniment to any dish, these olives are from a Single Estate farm in the south west Peloponnese of Greece. Specialty Agrinion OlivesAgrinion Olives, big fresh plump olives, they are both flavourful and colourful. A feast for the eye. Naturally cured in a sea salt brine, celery, wine vinegar and certified organic extra virgin olive oil. These are from a region of Greece called Agrinion, where they get their name from. Note: naturally cured olives take over a 2 month period. Commercial olives are cured in record time using caustic soda which destroys both the flavour and nutrients of the olives.
